Veggie Quiche




Preheat oven to 200C and grease pie dish. Place shortcrust pastry over the pie dish and set aside.

Heat olive oil in a pan and cook onion, capsicum, zucchini and mushrooms until soft. Add the spinach at the end to soften.

In a bowl, whisk eggs, milk, salt and pepper until well combined. Mix in 3/4 of the cheese.

Put the veggies on top of the pastry and then pour over egg mixture. Place the tomatoes and sprinkle the rest of the cheese on top and place the quiche in the oven. Cook for 25 minutes or until golden brown.
