Creamy Celery and Leek Soup

Method

Melt 2 tbsp butter in a pot on medium heat and add onion, leek and celery. Cook until the veggies have softened and then add the garlic.

Pour the veggie stock in the pot along with the bay leaves and salt and bring to a boil. Reduce the heat, cover and simmer for 15 minutes.

Remove soup from heat and let cool slightly. Take out the bay leaves and and pour soup into a blender and blend until smooth.

Pour soup back into the pot and stir in cream. Garnish with pepper and fresh herbs.
