Mini Zucchini Egg Bites

Ingredients

  • 2 zucchinis, grated
  • 2 spring onions, sliced
  • 4 eggs
  • 100g fetta, crumbled
  • 1 tsp stock powder
  • Salt & pepper
Method

Preheat oven at 180 degrees. Whisk the eggs in a bowl and then combine the rest of the ingredients.

Spoon the mixture into a greased small muffin tray and bake in the oven for 15-20 minutes or until cooked through.
