Vegetarian Fajitas

Ingredients

  • 4 capsicums (variety of colours), sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 2 tsp chilli powder
  • 1 tsp paprika
  • 1 garlic clove, chopped finely
  • Salt & pepper
  • Black beans, cooked
  • Tortillas
  • Guacamole (optional)


Method

Heat olive oil in a pan over medium high heat. Cook the garlic and add black beans. Toss in capsicums and onion, and cook until tender. Add chilli powder, paprika, salt and pepper to season. Remove the pan from the heat.

Warm up tortillas in the oven for 2 minutes and then serve fajitas mix together with guacamole.
