Turkish Spinach and Feta Gozleme


  • 3 cups plain flour
  • 1 tsp instant yeast
  • 1 cup warm water
  • 4 cups spinach (or other leafy greens), chopped
  • 1 brown onion, chopped finely
  • 1 cup feta, crumbled
  • 1 tbsp olive oil
  • Salt & pepper


Combine flour, salt and yeast in a bowl. Pour warm water over it and mix it until it
holds together. Wet the bottom of the bowl and the surface of the dough. Cover it and let it rest for 40 minutes.

Dust the counter and knead the dough for 1-2 minutes. Shape the dough into 6 balls and cover with a damp cloth.

Combine spinach, onion, feta, olive oil and salt and pepper. Roll out dough in a circle shape and put 3 tsp of spinach mixture on one half of it. Then fold the empty side over and seal the edge.

Cook the gozleme in a pan over medium heat for 3-4 minutes each side. Brush the gozleme's with olive oil.
