- 2 sweet potatoes, peeled and cubed
- 1 can of chickpeas, rinsed & drained
- 3 garlic cloves, chopped finely
- Coriander, chopped finely
- 1 tsp cumin
- 1 tbsp red pepper flakes
- 2 tbsp olive oil
- Salt & pepper
- 1 avocado
- 1/2 lime, juiced
- 1 chilli
- 1/3 cup water
Preheat oven to 180C and cook sweet potatoes for 40-50 minutes.
Combine cooked sweet potatoes and chickpeas in a food processor leaving some parts slightly chunky.
Mix 2 garlic cloves, coriander, cumin, red pepper, salt & pepper with the potatoes and chickpeas.
Form mixture into patties and cook in olive oil over medium-low heat until golden brown.
To make the sauce, combine avocado, lime juice, chilli, water, salt and pepper and 1 clove of garlic in a food processor. Serve with patties.
