Spiced Oat and Pumpkin Loaf

Ingredients

  • 3 cups rolled oats
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 tbsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp allspice
  • ½ tsp ground nutmeg
  • 3 eggs
  • 1 cup pumpkin puree
  • ¼ cup honey
  • ½ cup olive oil
  • 1 tablespoon vanilla extract

Method

Preheat the oven to 180 degrees and oil a bread pan.

Process the oats in a blender until they’re the consistency of flour. Add remaining ingredients to the blender, and blend until you get a smooth paste.

Pour the mixture into the bread pan. Bake 45 minutes, and allow to cool until it’s room temperature before removing from the pan. Serve in thick slices.
