Soba Noodle Salad


  • 300g soba noodles
  • 1 capsicum, thinly sliced
  • 2 carrots, thinly sliced
  • 1 cup coriander, chopped
  • 1/2 cup spring onions, chopped
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 tbsp rice vinegar
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp ginger, chopped finely
  • 2-3 tsp hot sauce of choice
  • 1 garlic clove, chopped finely
  • Sesame seeds



Boil water in a pot over high heat and add in the soba noodles. Let the noodles cook until tender for about 6 minutes. Drain the noodles, drizzle a little bit of sesame oil over the noodles and set aside.

Combine soy sauce, rice vinegar, lime olive oil, maple syrup, ginger, garlic, sesame oil and hot sauce.

In a large bowl, mix together the noodles, capsicum, carrots, coriander, spring onions and the dressing. Top with sesame seeds.
