Ingredients
- 300g pumpkin, diced
- 1/2 red onion, chopped
- 1 tbsp olive oil
- 200g quinoa
- 1 cup coriander, chopped
- 1 cup mint, chopped
- 2 tbsp sunflower seeds
- 100g goat cheese (or your choice of cheese)
- 3 tbsp olive oil
- 1 lemon, juiced

Method
Preheat the oven to 220 degrees. Place pumpkin and onion on a baking tray with 1 tbsp of olive oil, salt and pepper. Roast until caramelised.
Cook quinoa in a pot of boiling water for 10-15 minutes and then drain.
In a large bowl, combine coriander, mint, sunflower seeds, olive oil, lemon juice, salt and pepper. Then mix in the pumpkin, onion and quinoa. Add the goat cheese on top and serve.
