Ingredients
- 2 tbsp extra-virgin olive oil
- 3 leeks, dark green parts removed, finely diced
- 1 tbsp white wine
- 1.5 cups greek yogurt
- 4 tbsp fresh chives, chopped
- 1 tsp lemon juice
- ¼ tsp cayenne pepper
- ¼ tsp salt
- ¼ tsp ground pepper
Method
Heat oil in a large pan over low heat. Add leeks and cook, stirring occasionally, until tender and golden, 20 to 25 minutes. Add wine, stirring to scrape up any browned bits. Remove from heat and let cool for 5 minutes. Meanwhile, combine yogurt, chives, lemon juice, cayenne, salt and pepper. Stir in the cooled leeks.
