Ingredients
- 2 sweet potatoes, chopped
- 4 carrots, chopped
- 1 parsnip, chopped
- 3 beetroots, chopped
- 1/4 cup honey
- 2 tbsp olive oil
- Thyme
- Salt & pepper

Method Â
Preheat oven to 200 degrees. Add all of the vegetables to a large baking dish and toss them with the olive oil and honey. Season with salt and pepper, and top with sprigs of thyme. Roast vegetables until golden and tender.
