Ingredients
- 2 sweet corn cobs
- 1/4 onion, chopped finely
- 2 tomatoes, diced
- 1 chilli, chopped finely
- Coriander, chopped roughly
- 1 limes, juiced
- Salt & pepper
Method
Grill corn with the husk on first until charred. Then remove husk and grill the corn cob for 2-3 minutes, rolling to heat all sides.
Cut the kernels off the cob and put in a bowl. Add the remaining ingredients and combine well.
