Ingredients
- 1 tsp olive oil
- 1 brown onion, chopped
- 1 carrot, peeled and chopped
- 3 garlic cloves, chopped finely
- 1 cup dry red lentils
- 2 sweet potatoes, peeled and cubed
- 1 tsp turmeric
- 1 tsp garam masala
- 2 tsp curry powder
- 4 cups veggie broth or water
- 1/2 cup coconut milk
- 2 tsp lemon juice

Method
Heat olive oil in a large pot and add the onion and carrot. Cook for 5 minutes until onion is soft, then add the garlic and cook for another 2 minutes.
Add the lentils, sweet potato, turmeric, garam masala, curry powder, salt and pepper. Stir until well combined then pour in the broth and bring to a boil.
Reduce to a simmer and cook for 25 minutes or until the sweet potato are tender. Stir in the coconut milk and lemon juice.
