Crispy Carrot, Sweet Potato and Halloumi Rosti




Add the grated sweet potato, potato and carrots to a bowl, squeezing out any excess liquid before you add to the bowl. Add the remaining ingredients to the bowl and mix well.

Put a skillet on medium heat and brush with oil. Add half the mixture to the skillet, creating a flat layer over the entire surface.

Cook for 10 - 12 minutes, then carefully flip and cook for another 10 - 12 minutes until golden brown on both sides.

Repeat this process again for the remaining half of the mixture.
