Beetroot and Feta Burgers




Wrap grated beetroot in a cloth and squeeze out as much liquid as possible over the sink.

In a large bowl, mix beetroot, spring onions, garlic, mint, lemon zest, lemon juice, 2 tbsp of flour, egg, salt and pepper. Then add feta.

Form the mixture into burger shaped patties and coat with remaining flour.

Heat the rest of the olive oil in a medium-high heat pan and cook patties 4-5 minutes each side. Serve with burger buns and salad.
