Ingredients
- 5 tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 bunch of parsley, chopped
- 1/2 lemon, juiced
- 2 tbsp olive oil
- Drizzle of balsamic vinegar
- Salt and pepper

Method
In a bowl, combine tomatoes, cucumber, onion, parsley and salt. Set aside for 5 minutes.
Then add the olive oil, lemon juice, balsamic vinegar and pepper. Toss the salad and enjoy!
