Cheesy Zucchini Muffins


  • 3 cups plain flour
  • 2½ tsp baking powder
  • 1 tsp salt
  • ¼ tsp freshly ground pepper
  • 1 cup milk
  • 1 egg
  • 2 tbsp extra virgin olive oil
  • 150g zucchini, grated
  • 100g cheddar cheese, grated
  • 1 spring onion, finely chopped
  • 1 tbsp fresh thyme, chopped


Preheat oven to 170°C and grease a muffin pan. In a large mixing bowl, combine flour, baking powder, salt, pepper and set aside. Whisk the milk, egg, and oil together. Add the wet ingredients to the dry ingredients and whisk until just incorporated. Stir in the zucchini, cheddar cheese, spring onion and thyme with a wooden spoon and mix well. Spoon the batter into the muffin tin and bake for 30-35 minutes, until a skewer inserted in the centre comes out clean. Allow to cool in the pan for at least 10 minutes before removing.
